Marbled Banana Bread

Ingredients
  • 200 g brown sugar (or 1 cup)
  • 200 g white sugar (or 1 cup)
  • 400 g plain flour (or 3 1/3 cup)
  • 20 g baking powder (or 4 tsp)
  • 1/2 tsp cinnamon
  • 10 g cocoa powder (or 2 tsp)
  • 100 g beurre noisette, room temp (or 1/3 cup + 2 tbsp)
  • 130 g sour cream, room temp (or 1/2 cup)
  • 4 large eggs
  • 400 g mashed bananas (about 3 1/2 medium Cavendish bananas)
Instructions
  1. Preheat oven to 175C. Grease and line a large loaf pan (9x5x3in or 23x13x8cm) with baking paper. See notes.
  2. In a medium bowl, mix together wet ingredients and mashed bananas.
  3. Make a well in the centre of the dry ingredients then pour and mix in wet ingredients.
  4. Take 1 cup of the batter then mix with cocoa powder. Set aside.
  5. Pour 1/3 of the light batter into the baking pan, then pour 1/2 of the dark batter. Repeat until batters are finished.
  6. Take a knife and draw a figure 8 4-5 times in the batter. Bake for 75 minutes turning halfway. It's done when toothpick inserted comes out clean.
