Banana Nut Muffins

Makes 6 large muffins or 12 standard muffins

Ingredients
  • 200 g brown sugar (or 1 cup)
  • 150 g gluten free flour, see notes (or 1 cup + 2 tbsp)
  • 50 g almond meal (or 1/2 cup)
  • 10 g baking powder (or 2 tsp)
  • 265 g overripe bananas, mashed (about 2-1/2 medium Cavendish )
  • 50 g olive oil (or 4 tbsp)
  • 2 large eggs, room temp (about 50-55 g each without the shell)
  • 15 ml vanilla paste or maple syrup (or 1 tbsp)
  • 75 g crushed roasted walnuts or pecans (or 2/3 cup)
  • 3 tbsp coarse raw sugar
Instructions
  1. Preheat oven to 180C. Grease and line a large 6 cup muffin pan or standard 12 cup muffin pan. In a medium bowl, mash bananas add eggs, vanilla or maple syrup and oil. Mix until smooth.
  2. In a large bowl, sift together, brown sugar, flour, almond meal and baking powder. Make a well in the centre and add the wet ingredients. Mix until almost incorporated. Add the nuts then mix until incorporated.
  3. Pour into lines muffin cups. Sprinkle 1/2 a tbsp of raw sugar on top of each muffin. Bake at 180C for 30 minutes or until a tooth pick inserted comes out clean.
Recipe Notes

  1. If you are not gluten-free, simply use plain flour instead of gluten-free flour.
  2. If you do not have almond meal in your pantry, simply substitute plain flour or gluten-free flour (if you're gluten-free) for all the amount of almond meal.
